This was a “Texas Caviar” bean salad – chickpeas, black-eyed peas, corn, peppers, onions and cilantro. Honestly, I didn’t love it. It needed something.
This might be the ugliest photo of all time, but I had to share it. My most exciting purchase at the market was this butternut squash for $1. Score. I’ve never even cooked with butternut squash! I need ideas…
The local food bank was selling produce from their farm, like the butternut squash. Other produce purchased – baby okra, eggplant and zucchini.
I also bought some Jalapeño Peach Jam and didn’t take its portrait. Picture a Mason jar with pale peach and pepper seed contents. Sounds gross, but it is actually great!
A few artist had booths, but I was only in a food mood. I did pick up a few business cards for Etsy shop stalking, though.
Any ideas what I should do with the butternut squash?
A butternut squash soup maybe?
I laughed out loud about the treeless dusty lifestyle. I’m in southern New Mexico and it sound exactly the same.
I love the wee little pumpkins in the stack. Fall is the bomb!

With butternut squash, you can make soup, cube them up and roast them, toss them into risotto or some other grain dish, mash them as is or mash them with some sweet potatoes to lower the overall starch and calorie content. Or you can use them in any recipe that calls for pumpkin or sweet potatoes. I have a butternut squash right now that’s going to be diced small and added to an apple/onion/butternut squash barley mix. It’s also going to be diced small and added to a stuffing for stuffed pumpkins! I’m pretty excited about that one!

Butternut squash is always good in soup, or just chopped and roasted!
how did I not know about that market!? grrr…
I really like TX Caviar…I usually put a can of rotel in mine- maybe that’s what is missing?!
I don’t have too much experience with bnut squash..but the few times I’ve had it I just cut it in half and roasted it facedown in an inch of water in the oven. Then for the last bit, turn them right side up and put butter and brown sugar inside and bake longer- pretty good!
